Made with hazelnuts and pine nuts, this nut roast is given a lovely tang from the feta, which melts to create a fantastic gooey texture. It is given a really festive kick from sweet butternut squash and peppers; all it needs now is a big pile of wilted spinach and some cranberry sauce.

This decadent veggie treat is full of sharp cranberries, sweet chestnuts and silky mushroom duxelle. This is then covered in a creamy spinach béchamel before finally being finished in buttery puff pastry. And all you need to do is pop it in the oven! Merry Christmas indeed.
