A fluffy pancake packed with delicious treats is a must on Shrove Tuesday. But if you’re looking to branch out from that old favourite lemon and sugar it can be a bit difficult finding some pancake inspiration.

Banoffee Pie

Top the pancakes with freshly sliced banana, a big dollop of whipped cream and a good drizzle of golden syrup and fold the pancake over. For a little added crunch crumble some walnuts over the top of this delicious fruity mix.

Mississippi Mud Pancakes

Melt dark chocolate with butter in a bowl over a pan of simmering water until it forms a glossy sauce. Drizzle over the pancakes and top with crushed chocolate biscuits, Oreos are particularly good!

Lemon Meringue

In a pan make a simple syrup by combining two parts sugar with one part water and the juice of a lemon, then simmer together until slightly thick. Do not stir as this will crystallise the mixture. Pour the syrup over warm pancakes so they absorb all the citrusy goodness, and sprinkle over some lovely crushed meringue.

Pizza Pancakes

Chop fresh tomatoes and discard as much juice as possible, you don’t want soggy pancakes! Add to creamy ricotta with a good  sprinkling of black pepper and stir to combine. Roll the pancakes with the tomatoes mixture, a few shavings of Parmesan and some fresh basil leaves.

All American Style Pancakes

Fry a few strips of bacon until they are golden and crispy. Top your pancakes with the bacon and sprinkle with a pinch of cinnamon. Pour over a generous amount of maple syrup so you have gleaming stack of delicious pancakes.
