My delicious Bombay toastie may not sound like the most exotic of snacks. But this was infact my street food snack of choice in wonderful Mumbai. Just over the road, and slighty to the right, of Chowpatty Beach was a little stall that made the best grilled cheese. Heavy with spice, fresh red onions and tomatoes it was just amazing. I have kept mine to a simple formula, however, you can funk up your grilled cheese with onion and or tomato, and even put the whole lot into a toastie!
Ingredients4 thick slices of bread
200g cheddar cheese, grated
1 green chilli, deseeded and finely chopped
1 handful of finely chopped coriander leaves
1/2 tsp. garam masala
- Pre-heat the grill to medium-high. Place the bread on a grill rack and grill on one side for 1-2 minutes, until toasted.
- Meanwhile chuck the cheese, chilli and coriander into a mixing bowl and mix together.
- Remove the grilling rack from the grill and turn the toast over. Top each one with a quarter of the cheese mixture and a good pinch of garam masala and salt. Place back under the hot grill for 1-2 minutes, or until the cheese has melted and just started going golden. Serve your grilled cheese sandwich immediately
