  • 2 tbsp olive oil, plus extra for drizzling
  • 1 onion, finely chopped
  • 4 cloves garlic, finely sliced
  • 2 tsp. ground cumin
  • 1 tsp. paprika
  • 500g/1lb 2oz frozen broad beans or drained tinned
  • 750ml/26fl oz/3 ¼ cups hot vegetable stock
  • Juice of a lemon
  • 1 handful of finely chopped parsley leaves
  • Sea salt and freshly ground black pepper
