From reading Cyrus’ book it’s clear that Indian cooking is his absolute passion. In his new book Cyrus has every possible kind of Indian dish you can imagine, with chapters dedicated to snacks, meat and poultry, fish, vegetables, street food, desserts, bread and rice, pickles and chutneys and even drinks. Phew, a mouthful in both senses!
For something spicy, we lived his hot and sweet prawns in a rich sauce that screams out for some raita. Or for a milder palette the creamy chicken with cashews is a must, with a fantastic sweetness from the nuts, served up with his cities namesake side: Bombay potatoes.
