John Gregory-Smith takes over Carousel restaurant with a Turkish menu in September
From the 1-5 September John Gregory-Smith will be taking over the kitchen of Carousel restaurant to cook a Turkish feast from his new cookbook Turkish Delights.
“I have created a Meyhane style menu – featuring a selection of vibrant Aegean meze dishes, including roasted beetroot dip, Haydari (creamy yogurt with feta) and grilled sardines with red cabbage.
Celebrating the food of Eastern Turkey, my main course will be a kebab called Ali Nazik, a luscious lamb tenderloin kebab that is marinated overnight in spices and grilled. This is served with smoky aubergine and labna yogurt. Desserts will be creamy rice pudding and a wicked chocolate torte called Mosaic Cake.
To accompany the meze, Yeni Raki will be served to get you in the mood. It’s a traditional Turkish drink that has a refreshing aniseed flavour. It works beautifully with the meze, served chilled, with a little ice.”
