Originating from North Africa, harissa is a piquant paste made from pounded chillies and other spices and herbs that can include cumin, caraway seed, coriander, garlic and tomato puree, there are also varieties flavoured with rose petals.

Dollop a tbsp. of harissa into a classic beef stew to add a deep flavour and a cheeky kick.
Spoon some harissa over cod loin and roast in a baking tray with cherry tomatoes, sliced chorizo and black olives for a quick fish supper.
Mix 1 tbsp. harissa with 2 cloves crushed garlic, 50g butter and the leaves from a few sprigs of thyme and season with salt and pepper. Rub the harissa butter under the skin of a chicken before roasting for a Sunday roast with a twist.
