From humble beginnings making cakes from her garden kitchen to cakes fit for royalty, Fiona Cairns has endured for 25 years as one of the best British bakers.

Trained as both a graphic designer and pastry chef Fiona started making cakes for friends when her husband suggested they be sold professionally. From a converted barn bakery she started making cakes for Harrods, Selfridges and Fortnum and Mason. By 2001 her husband Kishore had joined the company as managing director and the bakery moved into a state-of-the-art setting in Leicestershire.

Her cakes are now widely available and are sold from her website. What makes a Fiona Cairns cake special is the beauty in the craft, they are simply works of art.  “I think It’s the attention to detail that sets our cakes apart- not only the decoration, but the flavour too,” explains Fiona. “I think that the look and taste of a cake are of equal importance. It is said that we ‘eat with our eyes’ but the flavour must live up to our expectations, if not exceed them. All our cakes from the bakery are made by hand – right down to the tiniest details. We even make the dolly mixtures that top our fairy cakes!”

She is perhaps best known for the creation that was viewed by millions.  “The highlight would of course have to be making the wedding cake for the Duke and Duchess of Cambridge in 2011,” says Fiona. “It was the ideal brief for us as cake makers and designers. We worked very closely with Catherine’s brief which included The Language of Flowers, lace elements from the dress and architectural details from the room the cake was displayed in.”

Although Fiona’s end result may appear elaborate, her top tip is “Keep it simple, and choose a few colours, or a beautiful ribbon, to create a really effective design. Don’t be too ambitious, plan ahead and leave plenty of time – there’s nothing worse than being rushed when you’re baking or creative decorating.”

And exciting news for Londoners, there are rumours of a London store in the pipeline, we can’t wait to get our fingers into Fiona’s beautiful cakes.
