Kabuki Raw is led by head chef Rafael Carrasco and managed by the Kabuki Group, a world leader in Japanese cuisine with five restaurants, totalling three Michelin stars. Rafael learnt about Japanese cuisine under the watchful eye of three Michelin star maestro Seiji Yamamoto.
Kabuki Raw at Finca Cortesin Hotel will be following its lead from the Kabuki Group, using traditional Japanese dishes alongside new cuisines that have been inspired by their Mediterranean surroundings. Rafael will only be using the finest raw materials, with sustainable seafood sourced directly from mostly local fisheries, and the organic produce chosen from Finca Cortesin Hotel’s very own vegetable garden.
Rafael’s signature dishes include fatty tuna Usu-Zukuri with Antequera tomato and arbequina olive oil, Andalusian seaweed salad or tuna Tataki with green apple and olives.
Rates at Finca Cortesin start from €450 per night in a Junior Suite based on two people sharing including breakfast, excluding 10% VAT.
