Haggerston heavyweights Carl Clarke of Chick ‘n’ Sours, and Josh Katz from Berber & Q throw down the gauntlet and fight it out in an all-out kitchen takeover!
Neighbourhood rival restaurants Berber & Q and Chick ‘n’ Sours are going head to head in a series of smashing collaborations this November, bring their own unique cookery styles to each other’s restaurant staples. The events will see the two chefs Asian and Middle Eastern flavours excitingly crashed together for one night only.
Round 1 commences on the 16th of November. Carl will take his squad of chefs over to Berber & Q to battle it out with Josh’s meaty dishes. On the menu will be crispy chicken skin, schmaltz, smoked curds & pickled pomegranate; Szechuan coal roasted sweet potato with smoked pork belly and Korean BBQ sauce. Marking the end of the first fight will be a deep fried brioche with white miso ice cream and salted peanut brittle.
One week later, round 2 kicks off. Josh and his pals come armed with their very own meat rub, a special creation just for the event. Josh will pick out highlights from the Chick ‘n’ Sours fried chicken menu and spice them up with flavours from the Middle East. Josh’s menu will feature Za’atar chicken liver, with charred endive and blackened green chilli aioli. A “Guest Fry” of Saffron and Turmeric buttermilk fried drumstick and thigh comes with a date syrup glaze, smoked tahini, harissa, and coriander. Ending the fights will be a caramelised Banana and Nutella pita.
