From the guys behind Bravas Tapas, Amaru will be serving up Japanese take-away with a Peruvian twist.
Opening in January, the cosy restaurant will seat 15 and offer a variety of salads, ceviche, sashimi and tiraditos, with fresh fish delivered from co-operative fishing boats.
Dishes at Amaru will include prawn ceviche with coconut, mango, Rocoto pepper and red onion, sesame tuna with avocado, spicy sesame dressing and umeboshi plum. And desserts will include white miso cheesecake and a green tea tiramisu.
The interior is modelled on an izakaya, think Japanese gastropub with wooden walls and natural fittings.
